Best Ever Banana Muffins:
Ingredients 3 large overripe bananas (or 4 small) ¾ cup sugar (reduce to ½ for less sweet) 1 egg 1 tsp baking soda 1 tsp baking powder ½ tsp salt 1 ½ cups of all purpose flour (I like to use 1 cup flour + ½ whole wheat OR ½ cup oat flour) ⅓ cup melted butter Superfood add ins (optional) ¼ cup almond flour and/or ¼ cup ground flax - for protein and healthy fats Chocolate chips or frozen wild blueberries (I throw in around ½ a cup and add more on top of the muffins once scooped into the tin) Directions Mash bananas. Add sugar and slightly beaten egg. Add in the melted butter. Mix together the dry ingredients. Add the wet ingredients and mix (but don’t overmix). Add in the chocolate chips or blueberries. Scoop into muffin tins lined with papers. Bake at 375 for 18-20 minutes or until lightly browned on top. For a loaf, line the pan with parchment before adding the batter. Bake at 350 for 1 hour.
